Today, we celebrated Lee's 54th birthday with a quick trip to Council House for lunch. We put the top down on the convertible and enjoyed the beautiful weather. I'm terrible at taking selfies, but Lee insisted we take some photos in the car so here ya go. This afternoon, I made his favorite Blueberry Cake using the recipe our neighbor passed down to us. Toby even got in on the celebration when I caught him taking a big bite out of the cake as it was cooling on the kitchen table. All I could do was laugh. I also made Lee's requested supper of fried venison nuggets, biscuits, chocolate gravy and eggs. Finley and Cooper Facetimed to wish him a Happy Birthday and I had the grandkids guess how old he was. That was a hoot! Cooper isn't old enough to guess yet, but Finley guessed the closest at 51, Adeline said he was 17 and Olivia said he was 3. Kids can be so funny can't they! We have so much going on around here we couldn't get away to do anything more fun than lunch, but Lee still had a good day and we made the most of it.
The Cake
The famous Blueberry Cake recipe that my husband is such a fan of was passed on to us by our sweet neighbor Jetty. I'm allergic to blueberries, so unfortunately there was no cake for me. I hope you enjoy it as much as Lee does. It's really strange making a cake that I can't even taste to see if it is good or not so I have to take his word for it. It must be good though since he specifically requested it.
Buttery Blueberry Cake
Ingredients:
1 Box of Butter Cake Mix
8 oz cream cheese at room temperature
3/4 cup of granulated sugar
3 large eggs
1/2 cup Vegetable Oil
1 1/2 cups blueberries
1-2 TBSP flour
Directions:
Grease and Flour a bundt pan and preheat oven to 350 degrees F.

Using an electric mixer, blend cream cheese until soft and fluffy.
Add sugar and blend until combined.
Add eggs and blend until combined.
Add 1/2 box of cake mix and 1/2 cup of vegetable oil and blend until combined.
Add the rest of the cake mix and blend until combined.

Toss blueberries in flour and fold into batter.

Pour into bundt pan and bake for 40-45 minutes until top is brown and toothpick or cake tester can be inserted and removed clean.

Let the cake cool for 10-15 minutes and using a cake releaser, go around edges and turn onto cake plate or cooling rack to continue to cool.

You can put a glaze on top if you wish, but the recipe given to me was without a glaze.
That's it! Store in an airtight container and enjoy! Oh, just make sure if your dog is super smart and can reach the counter like Toby can that you put it out of reach. Ha Ha! Don't worry though. We just cut out this section including a few sections over on each side. You didn't think I threw the whole cake away now did you. Actually, Lee shared with Toby after dinner. He really loves those blueberries!

I had promised an update on our garden, but so far Lee has only gotten both garden spots bush hogged and fences cleared off. We hope to disk them up and plant this weekend, I freaked out for a while today because I thought I had lost all of my seeds when we moved. I searched everywhere for the manilla envelope I had put them in. Finally, I remembered where I had put it and they are safe and sound ready to go into the ground as soon as possible. Am I the only one that hides things from herself? Today has been all about not being able to find what I needed, when I needed it so I guess you could say I played hide and seek all day long. That's one thing that has been a struggle with moving - forgetting where you packed things or where you put them. Anyway, It's been a long day and I'm posting this late tonight so it's off to bed for me! Have a great weekend and let me know if you make the cake!
