This week from the Ramage Cousins' Cookbook, we cooked the first recipe in the Meats section which was Barbecued Chicken. We weren't too sure about this recipe because one of the ingredients was pickles! Yes, I said Pickles.
We said at the beginning of this journey that we would cook every single recipe but because we all have different tastes, we could not promise we would like every recipe and we didn't want to hurt anyone's feelings. We were very skeptical about this one for sure.
We followed the recipe as best we could despite the fact that some of the directions were not quite clear so we had to improvise a little on our own. Overall, it was an easy dish to cook up and did not require many ingredients. Most of the things needed you would normally have handy in your kitchen, which makes this a great last minute meal for your family or when unexpected company arrives.
I hope you try this recipe at home and see how you like it. It actually tasted pretty good, it just wasn't the kind of barbecued chicken we were used to eating. It's not a thick, lick your fingers, sticky sauce. Instead it reminded me of maybe more of an Italian style tomato sauce that the chicken kind of sits in as it cooks. Terri said it reminded her of a sauce our mother used to make with a chicken and rice dish. Wow, did that statement bring back lots of memories (It was not one of our favorite meals growing up).
Even though it wasn't one of our favorites so far, it did taste good and went very well with our side salad to make a healthy lunch. We sure do not intend to hurt anyone's feelings with our videos or reactions to any recipe. Please do not be offended by any comments or facial expressions made during any video. This is the first time we have attempted most of these recipes and you just never know what our reaction will be to any of them. If you like more of an Italian style or thin barbecue sauce on your chicken, this is the dish for you. A phot of the recipe is included below. I encourage you to give all the recipes a try and see what you think yourself! You won't be disappointed!
