Mouthwatering, Delicious, Apricot Cake!

Writer's picture: Melissa CollinsMelissa Collins

Last week, Terri and I baked an Apricot Cake recipe from our family cookbook. This cake was so easy to make and was absolutely delicious! We had so much fun baking this recipe and even more fun eating the final result! If you want an easy, moist, delicious cake you can whip up in a snap for your family and friends, this is it.

This recipe called for Apricot Nectar and we weren't sure where to get this ingredient because we had never used it before. I posted on a Homestead and Heritage Cooking group that I belong to and asked for their assistance. Amazingly, they suggested the Jumex brand that you can buy at Wal-Mart, Dollar Tree or Amazon. Originally, they said it would be in the International section, however, Terri found it on the juice aisle, so if you are looking for it and can't find it, you might want to check there before giving up.

The only other ingredients were oil, eggs and a lemon cake mix so there it is, easy peasy! Of course there is also a simple sugary glaze to top it off that requires very little effort at all! This is a quick, tasty, easy recipe that will satisfy even the most picky eaters. Be sure to try this one and let me know what ya think! You can get a link to the printable recipe in the video below!
