This week my sister and I cooked up some of Brenda's Baked Beans from page 9 of our family cookbook. Brenda was supposed to come and cook with us, but some crazy lunatic was on the loose in her community and she had to stay home until they located and arrested him. He had attempted to kidnap a local girl in town earlier, and had shot a local mail carrier in Brenda's community. Thankfully, they did eventually find him and he is in jail where he belongs. The girl was able to get away, but the mail carrier is in severe critical condition from her injuries. With all of this going on, Brenda was not able to meet us so we did our best to follow her recipe and get these baked beans cooked to perfection.
These baked beans are a family favorite at her house. She had planned to share family stories and photos of her dad, but since she was unable to come we didn't get to be a part of her storytelling. She did tell me that she has a brother in law that says these beans are good enough for a sandwich and he is on point! Y'all, you could eat these things for a meal all by themselves.
Terri, Olivia and I enjoyed our time in the kitchen together and were surprised at how easy and tasty these baked beans were. They have the best hickory smoked taste you will ever put in your mouth. My husband was going to grill chicken wings to eat with these tonight, but we had a long day so we ordered some fried catfish and french fries from a local restaurant called Pap's and I heated up the beans to go along with our take-out. It was a perfect meal!
